The temperature in January and February falls to minus ten degrees Celsius on average. Fortunately the locals have developed something against winter depression: Fudge. A large quantity of sugar is melted in large copper vats, then mixed with cream, butter, raw chocolate and a little salt, then cooled on large marble tables and cut into slices. The result is a soft, almost flaky texture and an intense taste.
